Sugar-Free Energy Bites

​I love the idea of energy bites… quick little grab-and-go snacks with plenty of nutrition. But what I don’t like is the sugar that recipes almost always call for (usually in the form of honey, or sweetened protein powders). So here is my (actually delicious) incredibly easy recipe for sugar-free energy bites!
Base Ingredients:
1 cup oats (I use Old Fashioned Oatmeal)
1 cup pitted dates (Medjool are my favorite)
1 cup (or half a jar) of nut butter
1 tablespoon coconut oil


From here, you can play around with your own mix-ins. In this particular recipe, I used cashew butter, but any nut butter would work just fine. I also added shredded coconut and cacao nibs. You could also try cinnamon, raisins, cocoa powder, seeds… share your favorites below in the comments!
Combine all ingredients in a food processor, and blend until well mixed, thick, and sticky.


From here, all you need to do is form into balls and refrigerate! They don’t have to be refrigerated if you’re on the go, but the coconut oil will harden and make them easier to handle when cool.
Store in a tupperware, and grab and go when you need a quick, delicious, nutritious snack! This recipe is even kid-approved, with NO ADDED SUGARS, thanks to some friends over for a play date while I tested the recipe.  Hope you enjoy!
