Hearty, Healthy, Homemade Chili! September 10, 2015
Even though it’s technically still Summer, it’s dreary and cool in my neck of the woods today, and it feels like Fall is on its way! Chili is one of my favorite cold weather staples, and this recipe is healthy, hearty, and delicious! Perfect for a cozy evening at home! Your ingredients are simple: 2 large cans of crushed tomatoes (or equivalent of your own!) 2 onions, peeled and chopped 3-4 cups of cooked or canned lentils or beans of your choice 1 package ground turkey Homemade chili seasoning (cumin, onion powder, garlic or garlic powder, salt, chili powder, and cayenne powder. All to taste, with cumin as your base flavor.) For this particular batch, I also added a large handful of fresh basil, just because the basil in my garden is doing awesome right now, and I wanted to take advantage! Combine all ingredients in a large pot. I am not a fan of beans, and prefer lentils instead. Don’t ask me why, I think it’s a texture thing, but I’ve also found that my kids are more likely to scarf down the lentils. You can stop here for vegan chili, or brown your ground turkey in a separate pan, drain the excess fat and water, and add it into the mix. Bring all ingredients to a boil, then cover and reduce to a simmer for 30-60 minutes. This recipe could also work in a slow cooker if you have time to brown the meat first. Rather than cheese or sour cream, I like to top this chili with nice fatty and nutritious avocado! I’ll pass on the corn bread and just fill up on this nutrient-dense comfort food instead!
