Clean Pumpkin Muffins!

'Tis the season for all things pumpkin! In addition to Fall flavor, pumpkin is high in Vitamin A, Vitamin C, fiber, potassium, magnesium, iron, folate, Vitamin E, and Vitamin B6! Here's a clean and healthy way to enjoy pumpkin, and all it's traditional seasonings without added sugars!

Ingredients:
-2c Old Fashioned Oats
-1, 8oz can Pumpkin Puree (or make your own!)
​-2, ripe bananas
-1/2c unsweetened applesauce
-2 eggs
-1/4c canola oil or butter
-1 tbs. cinnamon (or more to taste)
-1 tsp. each of: vanilla extract, ginger, allspice, ground clove (or more to taste)

Preheat oven to 350 degrees. Start by placing the oats in a food processor long enough to create a flour-like texture (30-sec to 1-minute). Then add all remaining ingredients, and blend until smooth (this will be a normal muffin-batter consistency).

Scoop batter into greased muffin tin (or baking or loaf pan to make a sliceable treat). You can fill muffin tins to the top, this recipe does not contain yeast or baking soda, and will not rise much. 

Bake 30 mins, or until toothpick inserted in the center comes out clean. Let cool 5 minutes, and enjoy warm! These are especially delicious with butter on top!
