Cilantro Lime Cauliflower Rice:
(Simple and delicious side dish, easy to substitute with any flavors you would normally use in rice dishes... but with a lower carbohydrate content, and higher nutrient density!)
-Frozen Cauliflower Rice (I typically use 2-3 bags for a family of four)
-1 stick of butter (or oil of your choice)
-1 TBS Garlic Powder
-2 TBS Lemon or Lime Juice
-1 TBS Salt (more to taste)
-2 TBS Dried Cilantro (1/4c fresh chopped)
-Saute frozen cauliflower rice in a sauce pan with butter until heated through.
-Add all other ingredients, stir and simmer 5-7mins, until well combined.
You can add toppings, or other seasonings, but this basic recipe will make you a delicious, healthy, low starch, low carbohydrate, high nutrient side dish in only a few minutes!
