Avocado Chicken Salad
(Delicious on it's own, in a lettuce-leaf wrap, with cucumber slices or chips, on toast, and more!)
-1 Rotisserie Chicken
-1 package bacon, chopped
-1 Ripe Avocado (or equivalent avocado mash), double for extra creaminess
-1 TBS Lemon Juice (more to taste)
-1 TBS Garlic Powder
-1 TBS Onion Powder
-1 TBS Dried Cilantro (or 1/4c fresh, chopped)
-2 TBS Salt
-Pull desired portions of meat (light, dark, or both) and chop into bite size pieces.
-Place all ingredients in bowl, and mix.
Did you know that MOST varieties of bacon included added sugar in their ingredients? Check your ingredients list, and choose a variety without added sugar. Commonly (but not always), the low-sodium bacon selection is also sugar-free.
This chicken salad is particularly delicious with a fresh and cool topping, like tomato, cucumber, or lettuce! The recipe is also very flexible on seasonings - it would also be good with dill, or Old Bay, or cumin. Play around with it and make it yours!
