It doesn't get much more simple than this. Riced Cauliflower is simply steamed cauliflower chopped down to the size of rice grains. It can be seasoned just about any way you choose! This particular recipe is for cilantro-lime flavor, because that's my personal favorite.
*Note*, cauliflower doesn't have much flavor of it's own, so any seasonings you add will really stand-out. It doesn't take much! I used to add a tiny bit of garlic to my recipe, but my kids complained it was too spicy that way.
I start with a plain old bag of frozen cauliflower, warmed up in the microwave. The convenience is more than worth it to me. But if you prefer fresh, you just need to chop and steam before "ricing".
Place prepared cauliflower in the food processor and "pulse" until it literally resembles the consistency of rice (15 seconds or so).
Next, add seasonings. For Cilantro-Lime, I add 3-4 tablespoons of canola oil, 1 tablespoon of lime juice, 2 or so tablespoons of cilantro and a pinch of salt. Fresh lime and fresh cilantro will absolutely improve the taste, I'm just (usually) all about the convenience factor.
