I already have a recipe here for a no-sugar-added banana ice cream, and it's delicious! But this recipe came to life on a hot Summer night, as my kids begged me for REAL ice cream for dessert. I was already in my PJs with no intention of leaving the house for the night, so we whipped up a homemade ice cream, that turned out to be AWESOME, and the kids' new favorite OVER store-bought!
*This recipe is not 100% free of added sugars; it is sweetened with honey. But it is significantly healthier than anything you'll find in the store, with ingredients the way ice cream was originally intended... high in fats and proteins, low in sugars.
-16oz Heavy Whipping Cream
-1 teapsoon Salt
(This is ALL you need for the base... the rest are our personal flavor add-ins for chocolate-peanut butter ice cream!)
-1/4c cocoa powder
-1/2c natural peanut butter
To begin, use an immersion blender or whisk to whip the liquid into a frothy, thick, cream. (This can take 2+ minutes, be patient!).
Next, add your mix-ins. Continue to whip until well-blended. The completed mixture will have a thick, pudding-like texture.
Pour the complete mixture into a tupperware, freeze for at least 2 hours, and then ENJOY! Don't forget to add the salt, this is will keep it from freezing to a solid block, so it is scoop-able.
