Who doesn’t love pancakes? When I was a kid, my siblings, friends, and I would regularly have pancake eating contests. In college, I could put away a large stack, dripping with syrup, every weekend.
But, as a more nutritionally conscious eater, pancakes have been off my menu for quite some time… until now! I bring you:
More Miles’ Clean Pancakes!
Your ingredients list couldn’t be more simple:
1 ripe banana
(If making a larger batch, just keep the ratio 1:1)
You can also add a dash of cinnamon for extra deliciousness!
Use a fork to fully mash the banana. Then crack the egg, and whisk it in with the mashed banana. Add cinnamon or other mix-ins of your choice, last.
Use plenty of oil or butter to grease your pan, bring to medium heat, and pour your batter in. Allow the edges to firm and brown before flipping. (*note* these pancakes don’t hold together quite as well as traditional flour pancakes. So if shape is important to you, flip cautiously! Though a scrambled pancake tastes just as good!)
1 banana makes 2 medium or 3 small pancakes.
The crispy, seared sweetness of the banana provides enough flavor that these can be eaten plain, and do not need syrup! And the balance of carbs and protein have become my perfect pre-workout fueling option! Quick to settle in my stomach, and never leaving me with that heavy feeling. Not to mention these babies are full of nutrients to power up your day!
