Merry Christmas and Happy Holidays from my home to yours!
My gift to you is my no-longer-secret recipe for healthier chocolate chip cookies! These cookies are soft, deliciously full of flavor, and not so bad for you! Flourless, 5-ingredient (plus chocolate chips) simple little bundles of joy! These are my kids’ favorite cookies! After baking, try freezing them and eating them cold. It sounds strange, but they taste just like sinfully delicious cookie dough when frozen!
Enough raving… here’s my recipe:
More Miles To Go Healthier Chocolate Chip Cookies
1 (16oz) jar of creamy cashew butter
3/4c coconut sugar (high in iron, zinc, calcium, potassium and inulin fiber)
¼ tsp salt
1 tsp pure vanilla extract
1/2c Ghiradelli 60% cacao dark chocolate chips
Preheat oven to 350. Line baking sheet with parchment paper (or coat with non-stick spray)
Blend all dry ingredients with cashew butter in a bowl. Add eggs and vanilla, and mix well. Stir in chocolate chips.
Press heaping spoonfuls of dough into cookie shape. (This dough won’t “melt down” like flour cookies do.)
Bake 10-12 minutes, allow to cool on the pan, then enjoy!
Remember, these cookies taste best when frozen after baking and eaten cold! Give it a try!
