I have to admit, while making this recipe and setting up the photo, I ate this entire bowl of Beet Hummus, along with an entire cucumber for dipping. It's SO good, and it's SO EASY!
-1, 16oz can Garbanzo Beans
-2 medium Beets
(boiled or canned are fine, I prefer to peel and oven-roast my own)
-1 tablespoon garlic (more or less to taste)
-1 tablespoon tahini
(For easy homemade tahini - grind sesame seeds in coffee grinder until turned to paste.)
-1 teaspoon salt
-2 tablespoons lemon juice
-1/4c olive oil
From here, all you have to do is place all the ingredients in a food processor (or blender), and blend until smooth! Then enjoy with raw veggies, chips, on toast, salad, eggs, etc! It's hard not to love that beautiful magenta color!
